Chicken and Chorizo Pasta Bake
Chicken and Chorizo pasta bake is a perfect midweek meal. It’s incredibly easy to make and takes very little time. This recipe is full of flavour as it combines tender chicken with spicy chorizo, which is then bound together plenty of cheese.
Ingredients
- 200g Chorizo
- 3 Chicken Breasts
- 400g Penne Pasta
- Tin Chopped Tomatoes
- 12 Cherry Tomatoes
- Yellow Pepper
- 150g Cheese
Method
- In a saucepan heat some water and cook the penne pasta based on the packets instructions
- Pre-heat oven at 200 degrees.
- Whilst the pasta is cooking add some oil into a saucepan. Once hot add the sliced chorizo and stir to coat with oil. Fry the Chorizo for 5 minutes
- Add the diced chicken and stir to coat in the juices from the chorizo. Fry until edges of chicken have browned
- Add the chopped pepper and cook for 5 minutes
- Add the cherry tomatoes and chopped tomatoes and cook for 10 minutes
- Stir in the cooked pasta and continue to stir to make sure its all fully combined
- Add half of the cheese and continue to stir until all of the cheese has melted
- Pour the pasta bake into ovenproof dishes and top with the remaining cheese.
- Put it in the oven and cook until the cheese on the top has browned and the edges are bubbling.
Many pasta bakes only contain the meat and the pasta, I did, however, add in some peppers and tomatoes to give it that little extra flavour and I think it worked really well. To give it that extra cheesy flavour, I mixed in some cheese whilst it cooks as well as topping the dish with some before popping it into the oven.
The great thing about this chicken and chorizo pasta bake is that it can be eaten for lunch or as a filling evening meal.

When working through the week and waiting to put Edwin to bed before we have tea, we try to have midweek dinners that are quick to make. This is one of the reasons why I wanted to make this pasta bake, the other being that Edwin loves his pasta (so I was able to save him some for the following day!).
The chicken and chorizo really compliment each other and the combination of the cheese really helps to bring it together.
Pre-heat the oven at 200 degrees
The first thing you want to do is to start cooking the penne pasta, check the package details on how to cook but most of the time you just need to boil in water. Whilst the pasta is cooking in a large saucepan heat some oil.
Once this is hot, add the sliced chorizo and give it a good stir. You want to stir it all so that the chorizo gets a good coating of oil. I love the smell and taste of chorizo, so I often have to buy more as I like to eat a few bits whilst its cooking. After 5 minutes add the diced chicken and give it all a stir. You will notice the oil taking on a red colour from the chorizo, I like to coat the chicken in this.
Fry the chicken with the chorizo until it is cooked on the outside. Unlike some pasta bakes, I like to add some additional things to help add some more flavour and texture. In this, I have added diced yellow pepper as well as cherry tomatoes. Cook these for a couple of minutes and then add the tinned chopped tomatoes. Allow this to simmer for an additional 5 minutes and then add in the pasta.
I love cheesy pasta bakes, I always think the extra cheese gives it that little bit extra. Normally id add the cheese on the top and then pop it in the oven but with this one, I like to add some into the actual pasta. Take about half of it and stir it through until it has all melted.
Finally, pour everything into ovenproof dishes and sprinkle the other half of the cheese over the top. Pop it in the oven and cook until the cheese on the top has browned and the edges are bubbling.
The best thing about this chicken and chorizo pasta bake is that it can be eaten for lunch or dinner. I would say that it’s filling enough to eat on its own but can also be served with salad or even potatoes.
