Pineapple Salsa is the perfect side for pork, fish, chicken or just to dip some Tortilla crisps in. It only takes 5 minutes to make and is perfect during a BBQ in summer and it went down very well.

Step by Step Pineapple Salsa Recipe

I was hosting a little BBQ party and on the grill was some jerk chicken drumsticks and BBQ glazed pork. There was a little salad and some new potatoes but it needed something a little extra to really bring out the flavours, that’s when I thought about a sweet yet slightly spice pineapple salsa. 

This was a perfect side as it took less than 5 minutes to prepare and make, but more importantly tasted amazing. It is now my go to side whenever I have friends over, whether for a BBQ or just to dip some tortilla crisps in whilst chatting, playing a game or watching a film. 

It’s funny seeing the disappointed faces when the bowl is empty, although they get the final laugh as I’m normally sent back into the kitchen to make some more! 

The first thing you need to do is to chop up the pineapple into cubes. When it comes to pineapple, I would recommend getting a fresh one instead of those in the can as it tends to be more fresh and not too sweet. The canned ones are normally in a syrup which can make them a little too sweet, if you do use the can then id recommend using a full lemon juice to help counteract the sweetness. 

Add the pineapple into a bowl, followed by the diced red pepper and onion. You then want to roughly chop the coriander and add it, if you don’t like coriander you could replace it with some parsley. Add the grated garlic, the zest of the lemon and lime and then finally the juice of half the lemon and half the lime. 

Add a little black pepper and then stir this with a wooden spoon until everything is all mixed up. If you have made this ahead of time then simply cover and place it into the fridge, you may want to give it another mix when you take it out to serve. You can keep it in the fridge for up to 3 days. If you have taken it out of the fridge then I would let it get to room temperature before serving, so it’s not too cold.

What to serve with pineapple salsa?

If you are looking for the perfect side this summer, this pineapple salsa recipe is the one I would recommend. (although you don’t have to wait till summer to enjoy it!) This salsa would be perfect if served with;

It goes really well with the above as it has a nice combination of sweet and spicy. I personally love it with some nice jerk chicken, the flavours are perfect and the colours really stand out.

How long will the Pineapple Salsa keep in the fridge?

This Pineapple Salsa tastes amazing, i’ll be very surprised if your guests leave you any! If you do however have a little left over, this will keep in the fridge for around 3 days. This gives you the perfect excuse to eat any leftovers the next day!

How to make your Pineapple Salsa with a kick?

The pineapple gives it that incredible sweet flavour and this combined with the citrus in the lemon and the sourness of the onion, you might want a little bit of a spicy kick. Black pepper will give it a little, however if you want more then you might want to add some diced jalapeños or some dried red chilli flakes.

Ingredients

  • 1 Fresh Pineapple Cubed
  • 1 Lemon
  • 1 Lime
  • 1 Red Pepper Finely cubed
  • 1 Red Onion Finely Diced
  • 1 Garlic Grated
  • Handful of Coriander

Instructions

  • Combine the pineapple, red pepper and onion into a bowl
  • Roughly chop the coriander and add to the bowl
  • Add the grated Garlic
  • Add the zest of the lemon and lime
  • Next add the juice of half a lemon and half a lime
  • Add a sprinkle of pepper
  • Using a wooden spoon mix all together to combine
